Ingredients
  

  • 4 cups fresh broccoli florets chopped into small pieces
  • 1/2 cup red onion finely diced
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds toasted
  • 1/2 cup cooked and crumbled bacon optional
  • 1/2 cup mayonnaise
  • 1/4 cup granulated sugar
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions
 

  • Start by preparing your broccoli. Wash and chop the broccoli florets into small bite-sized pieces.
  • In a large pot, bring water to a boil and add the chopped broccoli. Cook for 1-2 minutes until the broccoli is bright green and slightly tender.
  • Drain the broccoli and immediately place it in a large bowl of ice water to stop the cooking process. Drain again and set aside.
  • In a separate bowl, whisk together mayonnaise, sugar, apple cider vinegar, salt, and pepper to make the dressing.
  • Add the chopped red onion, dried cranberries, toasted sliced almonds, and cooked and crumbled bacon (if using) to the broccoli.
  • Pour the dressing over the top and stir until everything is well combined and coated in the dressing.
  • Cover the bowl and refrigerate the salad for at least 30 minutes (or up to 2 hours) to allow the flavors to meld together.
  • Before serving, give the salad a good stir and adjust the seasoning if necessary.
