- 1 pound of smoked sausage
- 1 pound of chicken breasts or chicken thighs
- Vegetables
- 1 onion
- 1 green bell pepper
- 2 cloves of garlic
- 1 can of diced tomatoes
- 2 celery stalks
- Herbs and Spices
- 1 teaspoon of cajun seasoning
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)

- 2 cups of long-grain white rice
- 1 cup of penne pasta
- 2 cups of chicken broth
Season the chicken thighs with Cajun seasoning and brown them in a pot or Dutch oven over medium-high heat. Once browned, remove the chicken and set it aside.
In the same pot, add the smoked sausage and cook until browned. Remove the sausage and set it aside.
Add the diced bell pepper and celery to the pot and sauté until softened.
Add the diced tomatoes, chicken broth, and Cajun seasoning to the pot and bring to a boil.
