- 2 pounds stewing beef trimmed and cubed
- 4 tablespoons plain flour
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion chopped
- 4 garlic cloves peeled and thinly sliced
- 3 large carrots peeled and chopped
- 2 celery sticks chopped
- 2 cups beef stock
- 2 cups red wine
- 2 tablespoons tomato paste
- 2 bay leaves
- 2 sprigs of fresh rosemary
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1 cup frozen peas
Preheat the oven to 160°C/320°F.
In a bowl, mix together flour, garlic powder, salt, and pepper. Coat beef in the mixture.
Heat olive oil in a large pot over medium heat. Brown beef in batches, then set aside.
Add onion, garlic, carrots, and celery to the pot. Cook for 5 minutes until softened.
Return beef to the pot. Add beef stock, red wine, tomato paste, bay leaves, and rosemary. Bring to a simmer.
Cover the pot and place it in the oven. Cook for 3 hours until beef is tender.
Mix cornstarch and water in a small bowl. Add to the pot and stir until stew thickens.
Add frozen peas and cook for another 5 minutes.
Remove bay leaves and rosemary sprigs before serving.
