Ingredients
  

  • 2 pounds stewing beef trimmed and cubed
  • 4 tablespoons plain flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 4 garlic cloves peeled and thinly sliced
  • 3 large carrots peeled and chopped
  • 2 celery sticks chopped
  • 2 cups beef stock
  • 2 cups red wine
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 sprigs of fresh rosemary
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 cup frozen peas

Instructions
 

  • Preheat the oven to 160°C/320°F.
  • In a bowl, mix together flour, garlic powder, salt, and pepper. Coat beef in the mixture.
  • Heat olive oil in a large pot over medium heat. Brown beef in batches, then set aside.
  • Add onion, garlic, carrots, and celery to the pot. Cook for 5 minutes until softened.
  • Return beef to the pot. Add beef stock, red wine, tomato paste, bay leaves, and rosemary. Bring to a simmer.
  • Cover the pot and place it in the oven. Cook for 3 hours until beef is tender.
  • Mix cornstarch and water in a small bowl. Add to the pot and stir until stew thickens.
  • Add frozen peas and cook for another 5 minutes.
  • Remove bay leaves and rosemary sprigs before serving.
