Bacon Cabbage and Potato Soup

- 8 oz Irish bacon or thick-cut bacon
- 1 medium onion diced
- 3 –4 cloves garlic minced
- 3 medium potatoes russet or Yukon gold, cubed
- 1 small head green cabbage chopped
- 6 cups chicken or vegetable broth
- 2 bay leaves
- 1 tbsp butter optional
- ½ cup heavy cream optional
- Salt to taste
- Black pepper to taste
- Fresh thyme optional
Cook bacon in a large pot over medium heat until crispy. Remove and set aside.
Leave about 2 tbsp bacon fat in the pot. Add onion and cook until soft.
Add garlic and cook for 1 minute.
Stir in potatoes and cabbage.
Pour in broth and add bay leaves. Bring to a boil.
Reduce heat and simmer for 20 minutes until potatoes are tender.
Mash some potatoes for thickness if desired.
Stir in cream and most of the bacon.
Season with salt and pepper. Remove bay leaves.
Serve topped with remaining bacon.
