Ingredients
  

  • 1 block 150g Boursin cheese (Garlic & Herb flavor recommended)
  • 1 cup uncooked orzo
  • 2 cups fresh spinach or thawed frozen spinach
  • ½ cup sun-dried tomatoes chopped (in oil, drained slightly)
  • 2 garlic cloves minced
  • 2 cups vegetable stock
  • 2 tablespoons olive oil
  • ¼ cup heavy cream optional, for extra creaminess
  • ¼ cup grated Parmesan cheese optional, for topping
  • Salt and black pepper to taste
  • Red pepper flakes optional, for a spicy kick

Instructions
 

  • Preheat Oven: Set the oven to 425°F (220°C).
  • Prepare Ingredients: Place the Boursin cheese in the center of a large baking dish. Add uncooked orzo around it. Sprinkle minced garlic and chopped sun-dried tomatoes over the orzo.
  • Add Spinach: Layer fresh spinach over the ingredients, spreading evenly.
  • Drizzle & Season: Drizzle olive oil over the dish. Season with salt, black pepper, and optional red pepper flakes.
  • Add Liquid: Pour vegetable stock over the orzo, ensuring it’s evenly distributed and the orzo is mostly submerged.
  • Bake Covered: Cover the dish with aluminum foil or a lid. Bake for 20–25 minutes, until the orzo is tender and the liquid is mostly absorbed.
  • Finish Uncovered: Remove the cover, stir gently to mix the melted Boursin with the orzo. If desired, drizzle in heavy cream for extra creaminess. Sprinkle Parmesan cheese on top and bake uncovered for an additional 5 minutes to allow the top to slightly crisp.
  • Serve Hot: Let rest for a few minutes before serving. Enjoy the creamy, savory flavors!
