- 1 medium baguette sliced into ½-inch slices
- 2 cups butternut squash peeled and diced
- 6 slices bacon cooked and crumbled
- 2 tbsp olive oil
- 1 tsp fresh thyme or ½ tsp dried thyme
- Salt and black pepper to taste
- ½ cup ricotta cheese or goat cheese
- 2 tbsp honey optional, for drizzling
- Fresh parsley chopped (for garnish)
Preheat oven to 400°F (200°C).
Place diced butternut squash on a baking sheet, drizzle with olive oil, season with salt, pepper, and thyme. Roast for 20–25 minutes until tender.
Meanwhile, cook bacon in a skillet until crispy, then crumble into pieces.
Arrange baguette slices on a baking sheet and lightly toast in the oven for 5–7 minutes.
Spread ricotta (or goat cheese) onto each toasted slice.
Top with roasted butternut squash and crispy bacon.
Drizzle lightly with honey for sweetness (optional).
Garnish with fresh parsley and serve warm.
