Ingredients
  

  • 1 medium baguette sliced into ½-inch slices
  • 2 cups butternut squash peeled and diced
  • 6 slices bacon cooked and crumbled
  • 2 tbsp olive oil
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and black pepper to taste
  • ½ cup ricotta cheese or goat cheese
  • 2 tbsp honey optional, for drizzling
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place diced butternut squash on a baking sheet, drizzle with olive oil, season with salt, pepper, and thyme. Roast for 20–25 minutes until tender.
  • Meanwhile, cook bacon in a skillet until crispy, then crumble into pieces.
  • Arrange baguette slices on a baking sheet and lightly toast in the oven for 5–7 minutes.
  • Spread ricotta (or goat cheese) onto each toasted slice.
  • Top with roasted butternut squash and crispy bacon.
  • Drizzle lightly with honey for sweetness (optional).
  • Garnish with fresh parsley and serve warm.
