Ingredients
  

  • For the lamb chops:
  • 4 bone-in lamb chops
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon fresh rosemary chopped
  • Salt and pepper to taste
  • Juice of half a lemon
  • For the smooth mashed potatoes:
  • 2 large Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • ¼ cup milk
  • Salt to taste

Instructions
 

  • Prepare the potatoes: Peel and chop the potatoes into even pieces. Boil in salted water for 15-20 minutes until tender. Drain and return to low heat.
  • Make the mashed potatoes: Add butter, milk, and salt to the drained potatoes. Mash or whisk until smooth and creamy. Keep warm.
  • Cook the lamb chops: Heat olive oil in a skillet over medium-high heat. Season lamb chops with salt and pepper. Sear for 3-4 minutes per side for medium doneness.
  • Add garlic and herbs: In the last minute of cooking, add butter, garlic, thyme, and rosemary. Spoon the garlic butter sauce over the chops.
  • Finish and serve: Let the lamb rest for a few minutes. Plate the lamb chops with mashed potatoes and drizzle with the remaining garlic butter sauce. Squeeze lemon juice over the chops before serving.
