Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef or turkey
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 2 tbsp tomato paste
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 cups elbow macaroni uncooked
  • 3 cups chicken or beef broth
  • 2 cups shredded cheddar cheese
  • 2 tbsp fresh parsley or green onions chopped (optional garnish)

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add ground beef, onion, and garlic; cook until browned.
  • Stir in tomato paste, chili powder, paprika, cumin, salt, and pepper.
  • Add diced tomatoes, beans, macaroni, and broth. Stir well.
  • Bring to a boil, then reduce heat and simmer for 12–15 minutes until pasta is tender.
  • Remove from heat, sprinkle with shredded cheddar cheese, and cover until melted.
  • Garnish with parsley or green onions before serving.
