- 1 tbsp olive oil
- 1 lb ground beef or turkey
- 1 small onion diced
- 2 cloves garlic minced
- 1 can 15 oz diced tomatoes
- 1 can 15 oz kidney beans, drained and rinsed
- 2 tbsp tomato paste
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups elbow macaroni uncooked
- 3 cups chicken or beef broth
- 2 cups shredded cheddar cheese
- 2 tbsp fresh parsley or green onions chopped (optional garnish)
Heat olive oil in a skillet over medium heat.
Add ground beef, onion, and garlic; cook until browned.
Stir in tomato paste, chili powder, paprika, cumin, salt, and pepper.
Add diced tomatoes, beans, macaroni, and broth. Stir well.
Bring to a boil, then reduce heat and simmer for 12–15 minutes until pasta is tender.
Remove from heat, sprinkle with shredded cheddar cheese, and cover until melted.
Garnish with parsley or green onions before serving.
