Ingredients
  

  • For the Chicken:
  • 1.5 pounds chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 minced garlic cloves
  • 1 tablespoon ground cumin
  • 1-2 chopped chipotle peppers in adobo sauce
  • For the Bowl:
  • 1 can black beans drained and rinsed
  • 1 cup roasted corn frozen, thawed
  • Onion powder and lime juice to taste
  • Fresh cilantro
  • Lime wedges
  • Optional fajita veggies bell peppers, onions

Instructions
 

  • Marinate the chicken by mixing olive oil, garlic, cumin, and chipotle peppers. Let it marinate for at least 30 minutes.
  • Cook the chicken in a skillet over medium-high heat for 6-7 minutes per side, or until it reaches 165°F internally.
  • Heat black beans and corn in a saucepan, seasoning with onion powder and lime juice.
  • Slice the chicken and layer it in serving bowls with beans, corn, cilantro, and optional fajita veggies.
  • Serve with lime wedges and enjoy!
