Ingredients
  

  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup peanut butter or almond butter
  • 1/4 cup coconut oil
  • 1/3 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped nuts optional
  • 1/4 cup dried fruits optional

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  • In a large mixing bowl, combine oats, nuts, and dried fruits (if using).
  • In a saucepan over medium heat, melt together honey, peanut butter, coconut oil, and brown sugar until smooth. Remove from heat and stir in vanilla extract and salt.
  • Pour the wet mixture over the dry ingredients and mix until well combined.
  • Fold in chocolate chips (reserve a few to sprinkle on top).
  • Press the mixture firmly into the prepared baking pan. Sprinkle reserved chocolate chips on top.
  • Bake for 15–20 minutes, until lightly golden around the edges.
  • Let cool completely in the pan, then lift out using parchment paper and cut into bars.
