Ingredients
  

  • 1 can 14.75 oz cream-style corn
  • 1 can 15.25 oz whole kernel corn, drained
  • 1 cup sour cream
  • 1/2 cup unsalted butter melted
  • 1 cup milk or heavy cream
  • 1 cup shredded cheddar cheese optional
  • 1 box corn muffin mix
  • 1-2 large eggs
  • 1 chopped onion optional
  • 2 tbsp sugar
  • Salt and black pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a skillet, melt butter over medium heat. Add flour and stir to form a paste. Slowly whisk in cream, stirring to avoid lumps.
  • Mix in cream-style corn, whole kernel corn, sugar, and seasonings. Cook for 5 minutes, stirring occasionally.
  • Pour the mixture into a baking dish. For a crunchier topping, sprinkle corn muffin mix on top.
  • Bake for 20-25 minutes until golden brown. Serve warm.
