- 2 boneless skinless chicken breasts (cut into cubes)
- Salt & pepper to taste
- 2 cloves garlic minced
- 1 cup heavy cream
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 1 lb potato gnocchi store-bought or homemade
- 1 cup fresh spinach optional
- 1 tsp Italian seasoning
- Fresh parsley chopped (for garnish)
Heat olive oil or butter in a large skillet over medium heat.
Season chicken with salt and pepper, then cook until golden and fully cooked. Remove and set aside.
In the same skillet, add garlic and sauté for 1 minute until fragrant.
Pour in chicken broth and heavy cream, stirring to combine.
Add Parmesan cheese and Italian seasoning, whisking until sauce thickens.
Stir in gnocchi and simmer for 5–7 minutes until tender.
Add spinach (if using) and cooked chicken, mixing well.
Garnish with parsley before serving hot.
