- 1 small onion diced
- 2 cloves garlic minced
- 2 medium carrots diced
- 1 cup frozen peas
- 1 lb boneless skinless chicken breast (cubed)
- 1 ½ cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- ½ tsp dried thyme
- ½ tsp black pepper
- Salt to taste
- 2 tbsp fresh parsley chopped (optional garnish)
In a large skillet, melt butter with olive oil over medium heat.
Add onion, garlic, and carrots; sauté until softened.
