Ingredients
  

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 1 cup frozen peas
  • 1 lb boneless skinless chicken breast (cubed)
  • 1 ½ cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp fresh parsley chopped (optional garnish)

Instructions
 

  • In a large skillet, melt butter with olive oil over medium heat.
  • Add onion, garlic, and carrots; sauté until softened.
  • Stir in cubed chicken and cook until golden on all sides.
  • Add orzo pasta and toast lightly for 1–2 minutes.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat and simmer until orzo is tender, about 10 minutes.
  • Stir in peas, heavy cream, thyme, salt, and black pepper.
  • Simmer until sauce thickens to a creamy consistency.
  • Garnish with parsley before serving.
