- 4-5 chopped dill pickles
- 1 cup pickle juice
- 4 cups chicken or vegetable broth
- 1 cup sour cream or heavy cream
- 3 medium russet potatoes diced
- 2 tbsp butter
- 1 tbsp all-purpose flour
- 1 tsp garlic minced
- 1 tbsp dill weed or fresh dill
- 1 tsp onion salt
- 1 tsp white sugar
- 1/2 tsp curry powder
- 1/2 tsp white pepper
- Salt and pepper to taste
Melt butter in a pot and sauté garlic and onion salt.
Add broth and diced potatoes; simmer until tender (10–15 mins).
Add chopped pickles, pickle juice, curry powder, and spices.
Whisk sour cream with flour, then stir into the soup.
Mix in dill weed, season to taste, and serve warm.
