Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 large yellow onions thinly sliced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 cup chicken broth
  • Fresh thyme sprigs
  • 1 packet French onion soup mix optional
  • 1 cup melted cheese Gruyère or Swiss

Instructions
 

  • Prepare the Chicken: Season chicken with salt and pepper. Brown in a skillet with olive oil, 4-5 minutes per side. Remove and set aside.
  • Caramelize Onions: Add more oil if needed, then onions. Cook until golden. Add garlic and cook for 1 minute.
  • Make the Sauce: Stir in broths and soup mix (if using). Let reduce, then return chicken to the skillet and add thyme.
  • Finish in the Oven: Top chicken with cheese. Broil until bubbly and golden.
  • Serve: Rest briefly, then serve hot.
