- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 large yellow onions thinly sliced
- 2 cloves garlic minced
- 1 cup beef broth
- 1 cup chicken broth
- Fresh thyme sprigs
- 1 packet French onion soup mix optional
- 1 cup melted cheese Gruyère or Swiss
Prepare the Chicken: Season chicken with salt and pepper. Brown in a skillet with olive oil, 4-5 minutes per side. Remove and set aside.
