French Onion Pasta

- 2 yellow onions thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic minced
- 2 sprigs fresh thyme
- 1/2 cup dry white wine
- 4 cups beef broth or vegetable broth for vegetarian
- 1 tbsp Worcestershire sauce
- Kosher salt and ground black pepper to taste
- 8 oz pasta rigatoni, orecchiette, or farfalle
- 1/2 cup heavy cream
- 1 cup Gruyère cheese or mozzarella or Swiss cheese
Heat olive oil and butter in a large braiser pan over medium heat.
Add sliced onions and kosher salt, cooking until golden brown (15-20 minutes).
Stir in garlic and fresh thyme, then add white wine. Let it simmer until mostly evaporated.
Add beef broth, Worcestershire sauce, and pasta. Cook until pasta is tender.
Stir in heavy cream and cheese, mixing until smooth. Serve hot.
