Ingredients
  

  • 2 yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 2 sprigs fresh thyme
  • 1/2 cup dry white wine
  • 4 cups beef broth or vegetable broth for vegetarian
  • 1 tbsp Worcestershire sauce
  • Kosher salt and ground black pepper to taste
  • 8 oz pasta rigatoni, orecchiette, or farfalle
  • 1/2 cup heavy cream
  • 1 cup Gruyère cheese or mozzarella or Swiss cheese

Instructions
 

  • Heat olive oil and butter in a large braiser pan over medium heat.
  • Add sliced onions and kosher salt, cooking until golden brown (15-20 minutes).
  • Stir in garlic and fresh thyme, then add white wine. Let it simmer until mostly evaporated.
  • Add beef broth, Worcestershire sauce, and pasta. Cook until pasta is tender.
  • Stir in heavy cream and cheese, mixing until smooth. Serve hot.
