Ingredients
  

  • 2 pounds small potatoes baby, fingerling, or new potatoes
  • ½ cup melted duck fat
  • 4 garlic cloves minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Kosher salt and black pepper to taste
  • Optional: Dried oregano for extra flavor

Instructions
 

  • Prepare Potatoes: Wash, dry, and cut larger potatoes into bite-sized pieces, leaving skins on.
  • Mix Ingredients: Combine melted duck fat, garlic, rosemary, thyme, salt, and pepper in a mixing bowl. Toss potatoes until evenly coated.
  • Roast: Spread potatoes in a single layer on a baking sheet and roast in a preheated oven at 400°F for 20-25 minutes, stirring halfway through for even crispiness.
  • Serve: Once golden and crispy, remove from the oven, sprinkle with more salt if desired, and serve hot.
