- 4 fresh cod or haddock fillets about 6 oz each
- 1 cup all-purpose flour plus extra for dusting
- 1 cup cold beer lager or pale ale
- 1 tsp baking powder
- 1 tsp salt
- ½ tsp black pepper
- Vegetable oil for deep frying
- Lemon wedges for serving
Pat the fish fillets dry and lightly season with salt and pepper.
In a mixing bowl, whisk flour, baking powder, salt, and pepper.
Gradually add the cold beer while whisking until a smooth, thick batter forms.
Heat oil in a deep fryer or large pan to 350°F (175°C).
Lightly dust each fillet with flour to help the batter stick.
Dip fillets into the beer batter, letting excess drip off.
Carefully place fish into hot oil and fry for 6–8 minutes until golden and crispy.
Remove with a slotted spoon and drain on paper towels.
Serve hot with lemon wedges and chips (fries).
