Ingredients
  

  • 4 fresh cod or haddock fillets about 6 oz each
  • 1 cup all-purpose flour plus extra for dusting
  • 1 cup cold beer lager or pale ale
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • Vegetable oil for deep frying
  • Lemon wedges for serving

Instructions
 

  • Pat the fish fillets dry and lightly season with salt and pepper.
  • In a mixing bowl, whisk flour, baking powder, salt, and pepper.
  • Gradually add the cold beer while whisking until a smooth, thick batter forms.
  • Heat oil in a deep fryer or large pan to 350°F (175°C).
  • Lightly dust each fillet with flour to help the batter stick.
  • Dip fillets into the beer batter, letting excess drip off.
  • Carefully place fish into hot oil and fry for 6–8 minutes until golden and crispy.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve hot with lemon wedges and chips (fries).
