Ingredients
  

  • 2 boneless chicken breasts
  • 1 cup buttermilk
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup all-purpose flour
  • 1 egg beaten
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil or butter
  • 2 brioche buns toasted
  • 2 tbsp mayonnaise or aioli
  • 1 tsp Dijon mustard
  • 1 tomato sliced
  • Lettuce leaves
  • Pickles optional

Instructions
 

  • Pound the chicken breasts evenly for uniform cooking.
  • In a bowl, mix buttermilk, paprika, garlic powder, salt, and pepper. Marinate chicken for at least 30 minutes (or overnight).
  • Prepare three bowls: flour in one, beaten egg in another, and panko breadcrumbs in the third.
  • Coat each marinated chicken breast first in flour, then egg, then breadcrumbs.
  • Heat olive oil or butter in a skillet over medium heat.
  • Fry chicken until golden brown and fully cooked (about 4–5 minutes per side).
  • Toast the brioche buns lightly.
  • Mix mayonnaise and Dijon mustard to make a creamy spread.
  • Assemble: spread aioli on buns, add lettuce, tomato, fried chicken, and pickles.
  • Close the sandwich, slice, and serve warm.
