- 1 lb fresh cayenne peppers stems removed
- 4 garlic cloves peeled
- 1 cup white vinegar or apple cider vinegar for tang
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar optional, to balance heat
Heat olive oil in a saucepan over medium heat.
Add cayenne peppers and garlic; sauté for 3–4 minutes until softened.
Pour in vinegar, salt, and sugar; bring to a simmer.
Cook for 10–12 minutes until peppers are tender.
Transfer mixture to a blender and blend until smooth.
Strain sauce through a fine mesh strainer if a thinner consistency is desired.
Let cool, then pour into sterilized bottles or jars.
Store in the refrigerator for up to 2 months.
