Ingredients
  

  • 4 large ripe tomatoes chopped
  • 2 red bell peppers chopped
  • 3 –4 red chilies adjust to spice preference
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • ½ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper optional for extra heat

Instructions
 

  • Heat olive oil in a saucepan over medium heat.
  • Add onion and garlic, sauté until fragrant and softened.
  • Stir in chopped tomatoes, bell peppers, and chilies.
  • Cook for 10 minutes until vegetables soften.
  • Add vinegar, brown sugar, paprika, salt, black pepper, and cayenne.
  • Simmer for 20–25 minutes, stirring occasionally.
  • Transfer mixture to a blender or food processor and blend until smooth.
  • Return to saucepan and simmer another 5 minutes to thicken.
  • Let cool and store in sterilized jars.
