- 4 large ripe tomatoes chopped
- 2 red bell peppers chopped
- 3 –4 red chilies adjust to spice preference
- 1 medium onion chopped
- 4 cloves garlic minced
- ½ cup apple cider vinegar
- ¼ cup brown sugar
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper optional for extra heat
Heat olive oil in a saucepan over medium heat.
Add onion and garlic, sauté until fragrant and softened.
Stir in chopped tomatoes, bell peppers, and chilies.
Cook for 10 minutes until vegetables soften.
Add vinegar, brown sugar, paprika, salt, black pepper, and cayenne.
Simmer for 20–25 minutes, stirring occasionally.
Transfer mixture to a blender or food processor and blend until smooth.
Return to saucepan and simmer another 5 minutes to thicken.
Let cool and store in sterilized jars.
