- 2 tbsp extra virgin olive oil
- 1 large onion chopped
- 4 garlic cloves minced
- 1 lb ground beef
- 1/2 lb ground pork
- 1/2 lb Italian sausage
- 1 cup red wine
- 2 tbsp tomato paste
- 2 cans 28 oz each crushed tomatoes
- 1 lb pork neck bones or ribs optional
- 1 tbsp dried oregano
- 1/2 tsp red pepper flakes
- 2 bay leaves
- Fresh basil leaves
- Sea salt to taste
Heat olive oil in a large pot over medium heat. Sauté onions until soft. Add garlic and cook until fragrant.
Brown ground beef, pork, and sausage in the pot.
Deglaze with red wine, simmer briefly, then stir in tomato paste, crushed tomatoes, and pork bones.
Bring to a boil, reduce heat, and add oregano, red pepper flakes, and bay leaves.
Simmer for 2-3 hours, stirring occasionally.
Add fresh basil and salt to taste. Remove bones before serving.
