Ingredients
  

  • 2 lbs boneless skinless chicken breasts (or thighs)
  • 1 cup BBQ sauce plus extra for serving
  • ½ cup chicken broth or water
  • 1 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar optional, for sweetness
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Set Instant Pot to sauté mode and add olive oil. Sauté onion and garlic until fragrant.
  • Add chicken, BBQ sauce, broth, vinegar, brown sugar, smoked paprika, salt, and pepper. Stir well.
  • Lock the lid, set valve to sealing, and cook on high pressure for 12 minutes.
  • Allow a natural pressure release for 5 minutes, then quick release the rest.
  • Remove chicken and shred with two forks.
  • Return shredded chicken to the pot and stir with remaining sauce.
  • Serve warm on buns, in tacos, or over rice.
