Ingredients
  

  • 1.5 cups orzo
  • 1 package Boursin cheese approx. 5.2 oz
  • cups chicken stock or veggie stock
  • 1 lemon zested
  • 2 cloves garlic minced
  • ¼ cup parmesan cheese grated
  • 1 tbsp olive oil
  • A handful of fresh spinach
  • Salt and pepper to taste
  • Optional: sun-dried tomatoes or zucchin

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Place Boursin cheese in the center of a baking dish.
  • Spread orzo around the cheese and drizzle with olive oil.
  • Add garlic, chicken stock, and lemon zest. Stir gently.
  • Add spinach and optional vegetables. Cover with foil.
  • Bake for 25 minutes.
  • Remove foil, sprinkle parmesan, and bake for 5-10 more minutes.
  • Let cool slightly, garnish, and season with salt and pepper. Serve warm.
