- 1.5 cups orzo
- 1 package Boursin cheese approx. 5.2 oz
- 2¾ cups chicken stock or veggie stock
- 1 lemon zested
- 2 cloves garlic minced
- ¼ cup parmesan cheese grated
- 1 tbsp olive oil
- A handful of fresh spinach
- Salt and pepper to taste
- Optional: sun-dried tomatoes or zucchin
Preheat oven to 375°F (190°C).
Place Boursin cheese in the center of a baking dish.
Spread orzo around the cheese and drizzle with olive oil.
Add garlic, chicken stock, and lemon zest. Stir gently.
Add spinach and optional vegetables. Cover with foil.
Bake for 25 minutes.
Remove foil, sprinkle parmesan, and bake for 5-10 more minutes.
Let cool slightly, garnish, and season with salt and pepper. Serve warm.
