- 4 pita breads cut into wedges
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup Kalamata olives sliced
- ½ cup red onion thinly sliced
- ½ cup roasted red peppers chopped
- ½ cup chickpeas roasted or canned (drained & rinsed)
- ½ cup feta cheese crumbled
- ½ cup tzatziki sauce
- Fresh parsley chopped (for garnish)
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Place pita wedges on a baking sheet, brush with olive oil, and sprinkle with oregano.
