Ingredients
  

  • 2 boneless chicken breasts cubed
  • 8 oz rigatoni pasta
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 small onion chopped
  • ½ cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese grated
  • 1 tsp dried oregano
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes optional
  • Salt and black pepper to taste
  • ¼ cup fresh basil chopped

Instructions
 

  • Prepare Chicken: Season and sauté chicken in olive oil until golden. Set aside.
  • Cook Pasta: Boil pasta to al dente, reserve ½ cup pasta water, and drain.
  • Make Sauce: Sauté garlic, onion, and sun-dried tomatoes in butter. Add chicken broth and cream. Simmer for 3-5 minutes.
  • Combine Ingredients: Stir in Parmesan, seasonings, chicken, and pasta. Adjust sauce consistency with pasta water if needed.
  • Serve: Garnish with fresh basil and extra Parmesan.
