- Grilled chicken breast sliced
- Romaine lettuce or mixed greens
- Black beans rinsed and drained
- Corn kernels
- Cherry or grape tomatoes halved
- Bell pepper diced
- Red onion thinly sliced
- Cheddar cheese shredded
- Avocado sliced
- Fresh cilantro chopped
- Southwest Dressing:
- Fresh lime juice
- Olive oil
- Ground cumin
- Chili powder
- Smoked paprika
- Garlic powder
- Onion powder
- Salt to taste
Season chicken with cumin, chili powder, smoked paprika, garlic powder, olive oil, and salt.
Grill chicken until fully cooked. Rest and slice.
