Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/4 cups granulated sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 2 cups grated carrots
  • 1 tart apple grated
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup crushed pineapple

Instructions
 

  • Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
  • In a large bowl, mix the dry ingredients: flour, baking soda, ground cinnamon, and salt.
  • In another bowl, whisk the eggs, sugar, oil, and vanilla until smooth.
  • Gradually combine the wet ingredients with the dry, stirring gently. Avoid overmixing.
  • Fold in grated carrots, apple, raisins, shredded coconut, nuts, and crushed pineapple.
  • Fill each muffin cup about two-thirds full with the batter.
  • Bake for 20-25 minutes, until a toothpick inserted comes out clean.
  • Let muffins cool in the pan before transferring to a wire rack.
