One Pot Cajun Beef and Cheddar Pasta

Ingredients
  

  • 1 lb 450g ground beef
  • 2 tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 2 tbsp Cajun seasoning adjust to taste
  • 1 can 14 oz diced tomatoes
  • 4 cups beef broth
  • 12 oz 340g pasta (penne or rotini work well)
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  • Stir in onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.
  • Mix in Cajun seasoning and stir well.
  • Add diced tomatoes and beef broth. Bring to a boil.
  • Stir in pasta and reduce heat to a simmer. Cover and cook 12–15 minutes until pasta is tender.
  • Add heavy cream and stir until creamy.
  • Remove from heat and fold in shredded cheddar until melted.
  • Season with salt and pepper, garnish with parsley, and serve hot.
