Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion finely diced
  • 1 carrot finely diced
  • 1 celery stalk finely diced
  • 2 oz pancetta diced
  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup crushed tomatoes
  • 1/2 cup passata
  • 2 tbsp tomato paste
  • 1/2 cup white wine
  • 1/2 cup whole milk
  • 1 bay leaf
  • 2 cloves garlic minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • Fresh parsley chopped (for garnish)
  • Tagliatelle or pappardelle pasta cooked

Instructions
 

  • Heat olive oil in a Dutch oven over medium heat. Sauté onion, carrot, and celery (soffritto) until softened.
  • Add pancetta and cook until crispy. Stir in ground beef and pork, cooking until browned.
  • Mix in garlic, then add crushed tomatoes, passata, and tomato paste. Stir well.
  • Deglaze with white wine, then season with salt, pepper, and bay leaf. Simmer for 1-2 hours, stirring occasionally.
  • Stir in milk during the last 30 minutes of cooking for richness.
  • Prepare pasta in boiling salted water. Drain and toss with the sauce.
  • Serve with fresh parsley as garnish and enjoy!
