- 2 tbsp olive oil
- 1 medium onion finely diced
- 1 carrot finely diced
- 1 celery stalk finely diced
- 2 oz pancetta diced
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup crushed tomatoes
- 1/2 cup passata
- 2 tbsp tomato paste
- 1/2 cup white wine
- 1/2 cup whole milk
- 1 bay leaf
- 2 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Fresh parsley chopped (for garnish)
- Tagliatelle or pappardelle pasta cooked
Heat olive oil in a Dutch oven over medium heat. Sauté onion, carrot, and celery (soffritto) until softened.
Add pancetta and cook until crispy. Stir in ground beef and pork, cooking until browned.
Mix in garlic, then add crushed tomatoes, passata, and tomato paste. Stir well.
Deglaze with white wine, then season with salt, pepper, and bay leaf. Simmer for 1-2 hours, stirring occasionally.
Stir in milk during the last 30 minutes of cooking for richness.
Prepare pasta in boiling salted water. Drain and toss with the sauce.
Serve with fresh parsley as garnish and enjoy!
