- 1/2 cup softened butter
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 12 oz jar creamy peanut butter
- 3 large eggs
- 2 tsp baking soda
- 1 tsp vanilla extract
- 4-5 cups quick-cooking oats
- 1/2 cup chocolate chips
- 1/2 cup multi-colored chocolate candies
- Optional: 1/4 cup raisins 1/2 cup shredded coconut, or 1/2 cup white chocolate chips
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, mix eggs and sugars until smooth. Add vanilla, peanut butter, and butter; blend well.
Stir in oats, chocolate chips, and candies (and optional add-ins if desired).
Drop spoonfuls of dough onto baking sheets, leaving space between cookies.
Bake for 8-10 minutes or until golden brown.
Let cool slightly on the sheet, then transfer to a wire rack to cool completely.
