Ingredients
  

  • 1/2 cup softened butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 1 12 oz jar creamy peanut butter
  • 3 large eggs
  • 2 tsp baking soda
  • 1 tsp vanilla extract
  • 4-5 cups quick-cooking oats
  • 1/2 cup chocolate chips
  • 1/2 cup multi-colored chocolate candies
  • Optional: 1/4 cup raisins 1/2 cup shredded coconut, or 1/2 cup white chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, mix eggs and sugars until smooth. Add vanilla, peanut butter, and butter; blend well.
  • Stir in oats, chocolate chips, and candies (and optional add-ins if desired).
  • Drop spoonfuls of dough onto baking sheets, leaving space between cookies.
  • Bake for 8-10 minutes or until golden brown.
  • Let cool slightly on the sheet, then transfer to a wire rack to cool completely.
