Ingredients
  

  • 6 –8 red chili peppers bird’s eye chilies for heat or red bell peppers for milder flavor
  • 4 garlic cloves
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp white vinegar
  • 1 tsp smoked paprika
  • 1 tsp oregano dried or fresh
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp sugar or honey optional, to balance heat

Instructions
 

  • Roast or grill chilies and garlic until lightly charred for smoky flavor (optional).
  • Add chilies, garlic, olive oil, lemon juice, vinegar, paprika, oregano, salt, pepper, and sugar/honey into a blender.
  • Blend until smooth, adjusting thickness with a splash of water or more oil.
  • Taste and adjust seasoning (add more lemon for tang, or chilies for heat).
  • Store in an airtight jar in the fridge for up to 1 week.
