Ingredients
  

  • 4 cups fresh broccoli florets
  • 1/2 cup unsalted butter
  • 1 small onion finely chopped
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 cups half-and-half
  • 2 cups chicken broth
  • 2 cups sharp cheddar cheese grated
  • 1/2 cup Monterey Jack cheese grated
  • 1/4 teaspoon nutmeg optional
  • Salt and black pepper to taste

Instructions
 

  • Melt butter in a large pot over medium heat. Add onions and sauté until soft.
  • Stir in flour and cook for 1 minute. Gradually add milk and half-and-half while stirring.
  • Add broccoli and chicken broth. Simmer until broccoli is tender.
  • Blend part of the soup for a smoother texture, if desired.
  • Stir in grated cheeses until melted. Season with salt, pepper, and nutmeg.
  • Serve warm with crusty bread.
