Ingredients
  

  • 5 pounds russet or Yukon Gold potatoes
  • 3/4 cup butter plus extra for topping
  • 8 oz cream cheese softened
  • 1/2 to 3/4 cup half-and-half
  • Salt to taste
  • Black pepper to taste
  • Optional: roasted garlic chives for garnish

Instructions
 

  • Peel and cut potatoes into equal pieces.
  • Boil potatoes in a large pot until fork-tender (30-35 mins).
  • Drain and let potatoes sit for 10 minutes.
  • Mash potatoes using a potato masher.
  • Mix in butter, cream cheese, and half-and-half gradually.
  • Season with salt and pepper to taste.
  • Serve warm or transfer to a baking dish, dot with butter, and keep warm in the oven.
