Ingredients
  

  • 1 lb Italian sausage
  • 1 cup diced onion
  • 1 cup sliced carrots
  • 2 cloves garlic minced
  • 6 cups chicken broth low-sodium
  • 1 can 14 oz diced tomatoes
  • 1 tbsp tomato paste optional
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 9 oz cheese tortellini fresh or frozen
  • 2 cups fresh spinach or kale
  • 1/4 cup heavy cream optional
  • 1/4 cup grated Parmesan cheese
  • 1 Parmesan rind optional

Instructions
 

  • Heat a large pot over medium heat and cook the Italian sausage until browned. Remove and set aside.
  • Sauté diced onions, sliced carrots, and minced garlic in the same pot until fragrant and softened.
  • Add chicken broth, diced tomatoes, and tomato paste (if using). Stir well and bring to a simmer.
  • Return the sausage to the pot, season with Italian seasoning, salt, and black pepper.
  • Stir in the tortellini and cook according to package instructions.
  • Add spinach or kale and the Parmesan rind. Cook until greens are wilted.
  • For a creamy version, stir in heavy cream.
  • Remove the Parmesan rind, garnish with grated Parmesan and fresh parsley, and serve hot.
