- 1 lb Italian sausage
- 1 cup diced onion
- 1 cup sliced carrots
- 2 cloves garlic minced
- 6 cups chicken broth low-sodium
- 1 can 14 oz diced tomatoes
- 1 tbsp tomato paste optional
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 9 oz cheese tortellini fresh or frozen
- 2 cups fresh spinach or kale
- 1/4 cup heavy cream optional
- 1/4 cup grated Parmesan cheese
- 1 Parmesan rind optional
Heat a large pot over medium heat and cook the Italian sausage until browned. Remove and set aside.
Sauté diced onions, sliced carrots, and minced garlic in the same pot until fragrant and softened.
Add chicken broth, diced tomatoes, and tomato paste (if using). Stir well and bring to a simmer.
Return the sausage to the pot, season with Italian seasoning, salt, and black pepper.
Stir in the tortellini and cook according to package instructions.
Add spinach or kale and the Parmesan rind. Cook until greens are wilted.
For a creamy version, stir in heavy cream.
Remove the Parmesan rind, garnish with grated Parmesan and fresh parsley, and serve hot.
