- 1 pound peeled and deveined shrimp
- 3 cups cooked rice preferably day-old
- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil
- 3 large eggs beaten
- 2 cups frozen mixed vegetables peas, carrots, corn
- 2 tablespoons low-sodium soy sauce
- 2 green onions sliced
- 3 cloves garlic minced
- Salt and white pepper to taste
Heat sesame and vegetable oil in a large skillet over medium-high heat.
Add shrimp, season with salt and pepper, and cook until pink. Remove shrimp and set aside.
Lower heat to medium, scramble the beaten eggs in the skillet, then remove and set aside.
Add more oil if needed, then stir-fry garlic, onions, and frozen vegetables until tender.
Add cooked rice, scrambled eggs, and shrimp to the skillet.
Stir in soy sauce and toss everything together.
Sprinkle sliced green onions on top and adjust seasoning with salt and pepper as desired.
