- 1 lb large shrimp peeled and deveined
- 1 cup stone-ground grits
- 4 cups water or chicken broth
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 3 tbsp butter divided
- 3 cloves garlic minced
- 1 tbsp olive oil
- Juice of 1 lemon
- ¼ tsp red pepper flakes optional
- Salt and black pepper to taste
- 2 tbsp chopped parsley for garnish
In a medium saucepan, bring water or broth to a boil. Slowly whisk in grits and reduce heat to low.
Simmer, stirring often, for 15–20 minutes until thick and creamy.
Stir in heavy cream, 2 tablespoons of butter, and cheddar cheese until smooth. Season with salt and pepper. Keep warm.
