- ½ cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1½ tsp baking powder
- ½ tsp salt
- ½ cup unsalted butter melted
- ¾ cup milk
- ½ cup brown sugar optional, for topping
Preheat oven to 375°F (190°C).
In a bowl, mix blueberries, sugar, lemon juice, zest, and vanilla; set aside.
In another bowl, whisk flour, baking powder, salt, milk, and melted butter into a smooth batter.
Pour batter into the greased cast-iron skillet.
Evenly spread blueberry mixture on top of the batter (do not stir).
Sprinkle with brown sugar if desired for extra crispiness.
Bake for 35–40 minutes until golden and bubbling.
