Ingredients
  

  • 4 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter melted
  • ¾ cup milk
  • ½ cup brown sugar optional, for topping

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, mix blueberries, sugar, lemon juice, zest, and vanilla; set aside.
  • In another bowl, whisk flour, baking powder, salt, milk, and melted butter into a smooth batter.
  • Pour batter into the greased cast-iron skillet.
  • Evenly spread blueberry mixture on top of the batter (do not stir).
  • Sprinkle with brown sugar if desired for extra crispiness.
  • Bake for 35–40 minutes until golden and bubbling.
  • Serve warm with vanilla ice cream or whipped cream.
