- ½ tsp cinnamon
- ¼ tsp salt
- 2 cups milk dairy or non-dairy
- 1 large egg
- ¼ cup maple syrup or honey
- 2 tsp vanilla extract
- 2 tbsp melted butter or coconut oil
- 1 ½ cups fresh strawberries chopped
- ¼ cup chopped nuts or almonds optional
Preheat oven to 375°F (190°C) and grease a 9x9-inch baking dish.
In a large bowl, mix oats, baking powder, cinnamon, and salt.
In another bowl, whisk together milk, egg, maple syrup, vanilla, and melted butter.
Combine wet and dry ingredients, then gently fold in strawberries (reserve a few for topping).
Pour mixture into the prepared baking dish.
Sprinkle remaining strawberries and nuts on top.
Bake for 35–40 minutes until golden and set.
