- 4 large flour tortillas
- 6 large eggs
- 1 tbsp olive oil or butter
- 1 cup black beans rinsed & drained
- 1 cup bell peppers diced
- 1 small onion diced
- 1 cup baby spinach
- ½ cup shredded cheddar or Monterey Jack cheese
- ½ tsp chili powder
- ½ tsp cumin
- Salt & black pepper to taste
- Salsa or hot sauce for serving
Heat olive oil in a large skillet over medium heat.
Add onion and bell peppers; sauté until softened (3–4 minutes).
Stir in spinach and cook until wilted. Remove vegetables from skillet.
In the same skillet, scramble eggs with chili powder, cumin, salt, and pepper.
Add beans and cooked veggies back into the eggs; stir to combine.
Warm tortillas in a dry skillet or microwave.
Place egg mixture onto tortillas, sprinkle with cheese, and roll into burritos.
Serve immediately with salsa or hot sauce.
