Ingredients
  

  • 4 large flour tortillas
  • 6 large eggs
  • 1 tbsp olive oil or butter
  • 1 cup black beans rinsed & drained
  • 1 cup bell peppers diced
  • 1 small onion diced
  • 1 cup baby spinach
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt & black pepper to taste
  • Salsa or hot sauce for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and bell peppers; sauté until softened (3–4 minutes).
  • Stir in spinach and cook until wilted. Remove vegetables from skillet.
  • In the same skillet, scramble eggs with chili powder, cumin, salt, and pepper.
  • Add beans and cooked veggies back into the eggs; stir to combine.
  • Warm tortillas in a dry skillet or microwave.
  • Place egg mixture onto tortillas, sprinkle with cheese, and roll into burritos.
  • Serve immediately with salsa or hot sauce.
