- 2 tbsp olive oil
- 1 ½ cups fresh watermelon diced into small cubes
- 1 cup feta cheese crumbled
- 3 tbsp cream cheese softened
- 1 tbsp honey plus extra for drizzling
- Fresh mint leaves chopped (for garnish)
- Freshly ground black pepper to taste
Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
Brush each slice with olive oil and toast in the oven for 8–10 minutes until golden and crisp.
