Ingredients
  

  • Chicken pieces preferably thighs
  • 1 cup all-purpose flour
  • 1 cup self-rising flour
  • 1 tablespoon kosher salt
  • 1 teaspoon Spanish paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1 cup buttermilk
  • Vegetable or peanut oil for frying

Instructions
 

  • Brine chicken in saltwater (optional) for several hours.
  • Mix flour, salt, paprika, garlic powder, onion powder, and cayenne pepper in a bowl.
  • In a separate bowl, whisk buttermilk.
  • Dip chicken pieces in buttermilk, then coat them in seasoned flour mixture.
  • Heat oil to 350°F (175°C) in a deep fryer or pan.
  • Fry chicken for 10-15 minutes per side until golden brown and fully cooked.
  • Drain on a wire rack.
  • Serve warm with your favorite sides.
