- 1 lb boneless skinless chicken breasts (cut into bite-sized pieces)
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp dried oregano
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup cooked rice ideally cooked in low-sodium chicken broth
- Sauce & Toppings:
- 1 cup tzatziki sauce
- 1 cup shredded mozzarella cheese
- ½ cup cucumber chopped
- ¼ cup red onion sliced
- 1 tbsp fresh dill chopped
Prep: Preheat oven to 375°F.
Season: In a large bowl, toss the chicken pieces with olive oil, minced garlic, oregano, salt, and pepper until evenly coated.
Layer: Spread the cooked rice in an even layer at the bottom of the 9x13-inch baking dish. Top with the seasoned chicken.
