Ingredients

  • Apple Filling:
  • 8 to 10 medium firm baking apples Honeycrisp, Granny Smith, Braeburn, or Jonagold, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • ⅓ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup salted caramel sauce plus extra for serving
  • Crumble Topping:
  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup chopped pecans
  • A pinch of sea salt
  • ½ cup cold butter
  • For Serving:
  • Vanilla ice cream
  • Extra salted caramel sauce

Equipment

  • 9-by-13-inch baking dish (or a deep 10-inch oven-safe skillet)
  • Large bowl (for the apple filling)
  • Second bowl (for the oat topping)
  • Pastry cutter (or two forks)
  • Vegetable peeler
  • Sharp knife and cutting board
  • Measuring cups and spoons
  • Rubber spatula or large spoon
  • Baking sheet (to catch bubbling caramel)
  • Instant-read thermometer (optional, only if making homemade caramel)

Method

  1. Step 1: Heat your oven to 350°F. Butter the baking dish, then toss the sliced apples with lemon juice, granulated sugar, cornstarch, ground cinnamon, and nutmeg.
  2. Step 2: Stir ½ cup salted caramel sauce into the apples, then spread them in an even layer in the baking dish.
  3. Step 3: In a separate bowl, mix the old-fashioned oats, all-purpose flour, brown sugar, pecans, and sea salt. Cut in the cold butter until you have uneven crumbs, from pea-sized pieces to small clumps.
  4. Step 4: Scatter the crumble topping across the apples without pressing it down. Bake for 40 to 50 minutes, until the filling bubbles around the edges and the oat topping turns golden brown.
  5. Step 5: Let the crisp rest for 10 minutes so the filling can thicken. Spoon it into bowls, add vanilla ice cream, and drizzle each serving with extra salted caramel sauce.
