Ingredients
  

  • 2 lbs chuck steak cut into chunks
  • 1 onion chopped
  • 2 carrots diced
  • 2 cups beef stock
  • 1 cup red wine or Guinness optional
  • 2 tbsp tomato purée
  • Salt pepper, and flour for seasoning and coating
  • 1 tbsp olive oil
  • Pastry dough for the pie
  • 1 egg for egg wash

Instructions
 

  • Preheat oven to 375°F (190°C). Season steak with salt, pepper, and flour. Brown in olive oil and set aside.
  • In the same pan, sauté onion and carrots. Add tomato purée and red wine or Guinness. Simmer briefly.
  • Return beef to the pan, pour in beef stock, and simmer for 1.5–2 hours until beef is tender.
  • Roll out pastry dough and line a pie dish. Add beef mixture, cover with pastry, seal edges, and make a small slit.
  • Brush with egg wash and bake for 25–30 minutes until golden and crispy.
