- 1 ½ lbs boneless skinless chicken thighs or breasts
- 3 tbsp olive oil
- 3 tbsp white vinegar
- 2 tbsp soy sauce
- 2 tbsp chipotle peppers in adobo sauce minced
- 4 garlic cloves minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp oregano
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp lime juice
- Fresh cilantro for garnish optional
In a bowl, combine olive oil, vinegar, soy sauce, chipotle peppers, garlic, cumin, paprika, oregano, pepper, salt, and lime juice. Whisk well.
Add chicken to the marinade, coating evenly. Cover and refrigerate for at least 1 hour (or overnight for best flavor).
