Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • 3 tbsp white vinegar
  • 2 tbsp soy sauce
  • 2 tbsp chipotle peppers in adobo sauce minced
  • 4 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp lime juice
  • Fresh cilantro for garnish optional

Instructions
 

  • In a bowl, combine olive oil, vinegar, soy sauce, chipotle peppers, garlic, cumin, paprika, oregano, pepper, salt, and lime juice. Whisk well.
  • Add chicken to the marinade, coating evenly. Cover and refrigerate for at least 1 hour (or overnight for best flavor).
  • Heat a large skillet or grill pan over medium-high heat.
  • Cook the marinated chicken for 5–6 minutes on each side, until golden brown and cooked through.
  • Remove from heat, rest for 5 minutes, and slice thinly.
  • Serve with rice, tortillas, or in burrito bowls. Garnish with fresh cilantro if desired.
