Ingredients
  

  • 8 lasagna noodles broken into pieces
  • 1 lb Italian sausage mild or spicy
  • 2 cups marinara sauce
  • 1 can diced tomatoes optional
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt pepper, and Italian herbs
  • Fresh basil for garnish optional

Instructions
 

  • Brown sausage in a skillet over medium heat; drain excess fat.
  • Stir in marinara sauce and diced tomatoes.
  • Add broken lasagna noodles, stirring to coat with sauce.
  • Spoon dollops of ricotta cheese evenly across the skillet.
  • Sprinkle mozzarella cheese over the top.
  • Cover and simmer on low heat for 15-20 minutes, until noodles are tender.
  • Garnish with fresh basil and serve hot.
