Ingredients
  

  • 2 thick-cut bone-in pork chops about 1½ inches thick
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter plus extra for basting
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • 1 tsp fresh rosemary chopped
  • 1 tsp fresh thyme chopped
  • 1 tbsp brown sugar optional for caramelization

Instructions
 

  • Preheat: Heat oven to 400°F (200°C).
  • Season: In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, and brown sugar. Rub the spice mix evenly over both sides of the pork chops.
  • Sear: Heat olive oil in a cast iron skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side until golden brown.
  • Add butter: Add 2 tablespoons of butter and baste the chops as it melts, spooning it over the meat for extra flavor.
  • Roast: Transfer the skillet to the preheated oven and roast for 8–10 minutes, or until the internal temperature reaches 145°F (63°C).
  • Rest: Remove from oven and let rest under foil for 5 minutes before serving.
  • Serve: Serve hot with buttery mashed potatoes or sautéed vegetables.
