- 2 thick-cut bone-in pork chops about 1½ inches thick
- 2 tbsp olive oil
- 2 tbsp unsalted butter plus extra for basting
- 1 tsp kosher salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- 1 tsp fresh rosemary chopped
- 1 tsp fresh thyme chopped
- 1 tbsp brown sugar optional for caramelization
Preheat: Heat oven to 400°F (200°C).
Season: In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, and brown sugar. Rub the spice mix evenly over both sides of the pork chops.
